Taking responsibility for where we are in life

Just because you might shop in a health food store, it does not mean you can trust it. You  should still carefully  read labels on food products. Make sure that you stay away from processed foods even in the health food store. Fresh is always better for your health and well being. Cooking really healthy meals is much quicker than you might think. You just have to have an organized kitchen and pantry. Let’s not make ourselves victims by trusting large corporations with our health and wellness.

Let’s not slip this weekend

I know it is a holiday weekend but let’s try to avoid soda, chips, sugar, and white flour. Freeze some fresh fruits and then blend them to make a sorbet of sorts. Then we won’t feel deprived. Make herbal ice tea with lots of fresh mint and fresh orange juice to sweeten it instead of alcoholic beverages. This is difficult, I know. I love my wine with meals but I am so determined now more than ever to cut out all unnecessary carbs and calories until I reach my goals. UNLESS you really substantially increase your heart rate for over an hour and burn those extra calories. Try spin class, or just biking fast enough to get your heart rate up. That will really help a lot. I also LOVE the stairmaster. The last time I lost a lot of  weight that is how I did it.

Memorial Day Recipe

This chicken dish is so delicious and is very easy to make. You will want to hold on to this recipe. I use a variation of this marinade for lamb and pork as well.

Memorial Day Recipe ( serves 8 )

1/2 pound of chicken thighs
1/2 pound of chicken legs
2 chicken breasts cut in half

For marinade:
3 tablespoons Dijon mustard
2 tablespoons olive oil
3 cloves of garlic minced
3 tablespoons fresh or dried rosemary
1 tablespoon of fennel seeds
1 teaspoon salt
1 teaspoon of fresh ground white pepper
juice of 1 large lemon plus the rind

Wash chicken thoroughly in salty water. Rinse well. Mix all other ingredients together. Add chicken to marinade cover and let stand in refrigerator all day or overnight.

Cook over hot outdoor grill as normal.

Serve with mixed green salad with carrots and celery.

Let’s support each other in our weight loss goals

Try drinking 1/2 ounce of water for every pound that you weigh. When you drink the proper amounts of water daily, your skin will be more radiant and your weight will come down. My favorite snack food is munching on a mix of walnuts, dried cranberries and pumpkin seeds. 3 ounces is very filling. Your blood sugar remains balanced.

Remember to eat your dinner before 8 p.m.  This will  make it easier to properly digest your food, assimilate it and then eliminate the waste.

Getting in shape

Hi Ladies,  summer is right around the corner. I once again waited too long to get in shape for the season. That is my problem. Instead of making exercise a daily routine, I put it off till the last minute. That is called victom mentality. Not good for you. I did not until recently (due to  severe back issues) get serious about getting in shape.  Now I spin 2 – 3 times a week  (love it) and the rest of the time go to the Body for a killer workout on Lex and 62nd street for toning, strengthening and lengthening. Who wants to join me in a contest to lose the most weight thru exercise and slight diet modifications before July 4th? Anyone interested just email me directly. Detoxifying Adzuki Bean Soup Recipe

Summer is almost here! To make sure you look your best from outside, you have to help your body clean itself from inside. Here is one of my favorite recipes that will help get rid of the toxins that we normally accumulate during the cold seasons:
Adzuki Bean Soup
Detoxifying Adzuki Bean Soup

2 cups Adzuki beans, soaked in water overnight
1 tablespoon toasted sesame oil
1 small onion, chopped
1 carrot, chopped
1 stalk celery, chopped
2 teaspoons cumin
1/2 teaspoon turmeric
3 garlic cloves, chopped
2 tablespoons freshly grated ginger
2 quarts chicken or vegetable stock in water
sea salt
freshly ground white pepper
1/2 cup freshly squeezed lime juice
1/2 cup chopped cilantro

Drain the beans, place the beans, along with 5 cups of cold water in a large heavy bottom pot and bring to a boil. Cook 1 hour or until tender. Drain beans and set aside. In a stockpot, heat the sesame oil over medium heat. Add the onions, carrots, celery, cumin, turmeric and saute until tender, about 10 minutes. Add the garlic and ginger and cook 1 minute. Add the beans, stock and salt and pepper to taste. Simmer an additional 25 minutes or until beans are tender, stirring occasionally.
