Most delicious brownies on the planet that are good for you

Hi Gang, everyone who knows me knows that my husband is my world. He works so hard, often 7 days a week. I like to nourish him and show him my love and appreciation with delicous nutritious meals as well as affection.  I juice for him everyday. The recipes are in my book. The other night after a delicious meal, he wanted something sweet. I was tired but knew how much it would mean to him if he had his little nibble of a sweet. I offered to make him the most delicious brownies. He was so happy.  When I bake I use only organic ingredients.  I also use ingredients that boost the metabolism and lower cholesterol too just to compensate.

Grease a 9 x 9 baking dish with coconut oil and dust with flour. Set aside. Preheat oven to 350 degrees.

2 large eggs, 1 stick of unsalted butter, 1 tsp pure vanilla, 1 large square or 4 ounces of 60% cacao dark chocolate  premium baking bar (or any good quality baking bar that is either higher  or lower cacao). 1/2 cup of coconut flakes, 3/4 cup turbinado sugar or raw sugar, 1/2 tsp of sea salt or Kother,  1/2 cup pure cocoa powder, 1 tsp cinnamon, 1 teaspoon ground ginger, 1 tsp of baking powder, 1/2 cup spelt flour, 1 cup chopped walnuts or pecans, 1 tsp instant expresso powder.

Melt butter and chocolate over double boiler. Add eggs and sugar and beat with wire wisk by hand. Mix all dry ingredients. By hand with wire wisk incorporate dry ingredients  into wet and set aside to rest for a few minutes.  Place batter (very thick batter) in to prepared baking dish. Bake for exactly 30 minutes or until a toothpick comes out clean. These brownies will stay moist for days. Don’t forget coconut lowers your cholesterol so don’t worry. Pure chocolate helps release serotonin in the brain which will help you sleep like a baby. Cinnamon and ginger increase your circulation and boost your metabolism. Use moderation when eating sweets. Increase your aerobic exercise on days that you eat deserts.

It took me 5 minutes to whip up this batch of brownies because my pantry is stocked well with what I need. I could not cook the way that I do without that.  That is the most important first step when cooking or baking.

Let me know how you like them.

Cooking for beauty

Hi Gang, once again someone I know with very dry skin has a broken bone. Did you know that very dry skin can be an indiation that you are deficient in calcium? Well, there are many ways to get calcium in to your diet.  All of my soup recipes in my book are full of vitamins, minerals and nutrients that support your health and beauty. BUT, think outside the box and experiment. Once you learn the fundamentals of cooking you can whip up a soup in no time at all. Remember that variety in your food is where it is at for health. Make sure above ground grown vegetables and below ground vegetables should be consumed daily. This way you get your full range of nutrients.

Even though I eat as well as can be expected living in the city and I do shop at either Agatha and Valentina, Whole Foods, or Citarella when I cannot get to Farmers Market at Union Square, I still make sure I am taking all of my vitamins daily to insure I am getting what I need to deal with my stress levels etc. If you have questions or need helping planning meals give me a shout. I am there for you. Or, if you need me to teach you how to cook, I am trying to get Macy’s on board letting me cook in their stadium kitchen so that I cand cook for a crowd. I will keep you posted.

Farmers Market Union Square

Today I had the pleasure of shopping for my farm fresh veggies, fruits and proteins. I felt like I was in heaven. I think I am going to take up a booth on either Saturdays or  Wednesdays to teach how to cook the amazing produce and foods that are so plentiful at the farmers market. You cannot help but be healthy eating such farm fresh foods. Even the chicken was fresh killed and the eggs were only 2 days old.

Martha Stewart “loves” Marine Lotion!

Martha Stewart was just in our spa this week purchasing two bottles of Marine Lotion. She called it her “favorite product out there.”

This potent, anti-aging, skin nourishing elixir is as close to a miracle as you can get. It hydrates, nourishes, reduces cellulite, and helps prevent wrinkles, fine lines and stretch marks.

Key ingredients include Algae Oil: Earth’s most nourishing clock-stopper, Cypress: serves to calm the skin, Juniper: anti-inflammatory ingredient, Marjoram: an aromatherapeutic element, and Vetiver: an important antibacterial component.

Use it under your moisturizer, add it to a facial mask, use it after the shower anywhere on your body and face. Take it on a plane trip and you’ll look better when you arrive than when you left! It’s a key ingredient in the Susan Ciminelli Glow and you’ll see and feel the difference the first time you use it. If you’re new to Susan Ciminelli, Marine Lotion is a great place to start.

Marine Lotion can be purchased in our spa on 120 E. 56th St. or online at for $95. Also comes in a 2oz travel size container for $22.
