Creamy Broccoli Soup

This soup is full of antioxidants, vitamin C, and iron, which are needed o maintain a healthy immune system and beautiful skin. Broccoli is a cruciferous vegetable and is thought to help slow or possibly prevent the development of cancer. Children who dont normally like eating vegetable really enjoy this flavorful soup. Serves 6 to 8

1 tablespoon extra-virgin olive oil
1 pound broccoli, chopped into small pieces
1 large onion, diced
1 carrot, diced
2 stalks celery, chopped
2 garlic cloves, chopped
1 cup chopped kale
2 quarts chicken stock
teaspoon freshly ground nutmeg
Sea salt
cup freshly chopped flat-leaf parsley
cup freshly chopped basil or tarragon

In a large skillet heat the olive oil over medium heat. Add the broccoli, onions, carrots, celery, garlic, and kale. Saut about 10 minutes.

Transfer the vegetable to a large stock pot along with the chicken stocks. Bring to a boil over high heat, then reduce heat to a simmer. Add the nutmeg, salt, and pepper to taste. Simmer 20 minutes. Garnish with parsley and basil and serve.

Transfer the soup to a blender in batches and puree until smooth (or use an immersion blender). Return the puree soup to the pot and reheat. Taste and adjust seasoning if necessary before serving.
