Fall is a transitional month. The leaves have turned the most radiant colors and have put on quite a show before falling to the ground. Pumpkin seeds are extremely high in nutrients that are good for your heart, are high in fiber, excellent for men's prostate organ, and are known to lower blood sugar levels. These two foods can help eliminate rosacea, a condition that is perpetuated by a diet high in sugar, and processed foods.
Pumpkin Soup Recipe
1 small can of organic pumpkin
2 tablespoons of coconut oil
1 cup chopped onion
1 tablespoon of minced fresh garlic
1 large carrot peeled and chopped
1 large stick of celery chopped
1 teaspoon of turmeric powder
1 tablespoon of minced peeled ginger
1/2 teaspoon of powdered clove
1 teaspoon of cinnamon
1 quart of organic chicken stock or broth
1 tablespoon of sea salt
fresh ground mixed peppercorns to taste
1/2 cup of whole milk Greek yogurt
Sauté onion, garlic, carrots, celery, ginger, turmeric, and all of the spices for 5 minutes on low heat or until tender. Add pumpkin, chicken stock, and water to get the consistency of a pureed soup. Stir until combined. Simmer for one hour on low heat. Serve with a dollop of yogurt on each bowl. Serves 4.
Pumpkin is not just good for eating. It can also be used to make a homemade mask that will brighten and moisturize your skin.
Take a tablespoon of pumpkin puree, blend with a tablespoon of whole milk yogurt. Apply on clean skin on your face, neck, decollete, and the backs of your hands. Leave on for 20 minutes. Remove with a warm damp washcloth, then rinse with cool water. You will be amazed at how your skin glows.
